Sofrit pagès: history and recipe of one of the island's most iconic dishes

Sofrit pagès: history and recipe of one of the island's most iconic dishes

Ibiza's traditional cuisine is full of recipes that speak of its roots, life in the countryside and gatherings around the table.

Among them we find the sofrit pagès, a hearty dish full of flavour that combines meats, potatoes and sausages typical of the island.

A recipe that has been passed down from generation to generation and that continues to occupy a special place in Ibizan gastronomy.

Sofrit pagès: a dish linked to the traditions of the countryside

To discover the origins of sofrit pagès , you have to travel to rural Ibiza, when families lived closely linked to the countryside and the cuisine was marked by the products available at each time of the year.

Traditionally, this dish was prepared during the pig slaughters, one of the most important days in the calendar of the peasant houses. Family, friends and neighbors gathered to collaborate in the different tasks, from the preparation of the sausages to the preservation of the meat for the following months.

Those days of intense work required abundant meals to help regain strength. Sofrit pagès, with its combination of meats, potatoes, sobrasada and botifarra, responded perfectly to that need.

But the slaughters were much more than work. They also represented an opportunity to get together, share knowledge and keep family customs alive . This social dimension is still present in sofrit pagès, a dish that invites you to sit around the table and enjoy traditional cuisine without haste.

One of the particularities of popular gastronomy is that each family retains its own way of preparing recipes. Sofrit pagès is no exception: the quantities, the meats or the small details of the preparation can vary from one house to another.

On this occasion, we share a recipe collected in a traditional Ibizan cookbook, which combines peasant chicken, lamb, sausages and potatoes, accompanied by an aromatic snack.

Ingredients for 4 people:

  • 1 kg of free-range chicken
  • 1 kg of lamb meat
  • 4 pieces of sobrasada
  • 4 pieces of botifarra
  • 750 g of potatoes
  • 1 ñora
  • 5 heads of garlic
  • 2 bay leaves
  • 1 sprig of parsley
  • Saffron
  • 1 glass of olive oil
  • Salt and pepper

The character of this recipe lies in the combination of its ingredients. The chicken and lamb provide consistency, while the sobrasada and botifarra incorporate the characteristic flavours of Ibizan sausages.

The patató, a small potato that is very present in the traditional cuisine of the Pitiusas, completes the set.

On the other hand, saffron, ñora, garlic and aromatic herbs contribute to create that intense flavour that distinguishes the dish.

Although the result is a dish full of nuances, its preparation is based on traditional techniques and a combination of ingredients that are cooked together to integrate their flavours.

Separately, prepare two broths: one with lamb meat and the other with free-range chicken. To each pot you can add onion, bay leaf and salt.

While the broth is boiling, we can prepare a minced pepper with the previously fried ñora, three or four cloves of garlic, parsley and saffron. This mixture will be one of the aromatic bases of the dish.

In a clay pot, fry the rest of the garlic along with the sobrasada, bay leaves, botifarra and a little chopped parsley. Meanwhile, in a separate pan, fry the potato without cooking it completely.

Once prepared, add the potato to the clay pot and add the aromatic mixture we prepared before, salt and pepper. Next, add the chopped meats that we have boiled along with a cup of chicken broth and a cup of lamb broth.

Cover the casserole and let it cook for about 15 minutes, as indicated in the original recipe, so that the ingredients finish cooking and their flavors are integrated.

The result is a combination of meats, sausages and potatoes impregnated with the aromas of different herbs and vegetables. A recipe that demonstrates how country cuisine has been able to transform the products of the countryside into dishes full of personality.

And although each house has its own version, they all share something essential: sofrit pagès is much more than a recipe.

It is a small part of Ibiza's gastronomic history that deserves to continue to be passed down from one generation to the next.
