From the sea of Ibiza, to the kitchens of Madrid Fusión 2021

On Monday 31st May, our Eating in Ibiza product club promoted the presentation 'From the Sea of Ibiza', within the framework of Madrid Fusion 2021, to promote local Ibizan produce.

For this, we have counted on two renowned chefs from the island who have made six live preparations in total for the attendees, thus bringing the sea of Ibiza to the kitchens of Madrid.

For the occasion, one of the chefs chosen to represent the flavour of Ibiza was Óscar Molina, executive chef at La Gaia by Óscar Molina, Ibiza Gran Hotel and Casino Ibiza, who prepared three dishes featuring rays, catfish and tuna.

On the other hand, Álvaro Sanz, executive chef of Es Tragón, the first restaurant on the island to be awarded a Michelin star, continued his presentation with three dishes featuring other local Ibizan products: lobster, cuttlefish and salicornia from the island, rascasa and Ibizan langoustine.

We were honoured to have the gastronomic journalist Esteban F. Capdevila to present the event.

Óscar Molina emphasised the delicacy and exquisiteness of Ibizan rock fish due to the high salt content and the warmth of the Mediterranean waters, which gives the fish an exceptional and characteristic taste of the island. 

Those attending the presentation were able to enjoy the taste of Ibiza's sea with all five senses, in an event that has been promoted with the aim of publicising both the excellence of Ibizan local produce and the quality of Ibiza's gastronomy at the country's most important gastronomic event, Madrid Fusión.
