3 ways to enjoy the countryside and the sea in one dish
Ibizan gastronomy has a special ability to unite two worlds that define the island: the countryside and the sea.
Today we propose you to discover three traditional rice dishes that reflect that unique connection between land and the Mediterranean. Of course, as with many popular recipes, each family has its own version.
The ones we share here are some of the most common ways to prepare them, but you will surely find small nuances in each house that make them special.
Arròs de matances: tradition, family and Ibizan flavour
Few dishes arouse as much emotion among Ibizan people as arròs de matances.
Its origin is linked to the traditional pig slaughters, a day that brought family and friends together around the kitchen and always culminated with this rice as the protagonist.
The recipe combines ingredients from the countryside, such as different cuts of pork, free-range chicken and pebrassos, with a broth full of flavour and characteristic spices such as totespécies, white pepper or saffron peas.
The result is a creamy, aromatic rice deeply linked to the gastronomic identity of the island.
Although today it is enjoyed throughout the year, it is still one of those dishes that evoke family gatherings and long after-dinner conversations.
Because arròs de matances is not just a recipe: it is a shared tradition.
Ibizan paella: the Mediterranean in its purest form
Paella is one of the most popular dishes in Mediterranean cuisine, but in Ibiza it also has its own particularities that differentiate it from other versions.
Its preparation begins with a broth made from fish, vegetables and spices, to which a base is later incorporated where seafood, fish, meat and a minced meat essential in many Ibizan cuisines coexist: this combination provides a great depth of flavor and turns each paella into a rich and complex recipe.
Prawns, flakes, cuttlefish, white fish, chicken or rabbit are some of the ingredients that are usually part of this preparation.
As with any traditional dish, the proportions and ingredients can vary depending on who cooks it, but it always maintains that balance between seafood and country products that characterises the island's cuisine.
Arròs amb gerret i pinya de col: a treasure trove of popular cuisine
Less known outside of Ibiza, but present in many local cuisines, arròs amb gerret i pinya de col is one of those dishes that perfectly represent the daily gastronomy of the island.
Its main ingredient is gerret, a fish that is very abundant in Ibizan waters and has been part of the diet of many families for generations. Added to this is the cabbage pinya, the central part of cauliflower, which adds texture and softens the whole.
The recipe is based on a broth made with stir-fry, fish, garlic, parsley and spices, to which the vegetables are added before serving it with the fried gerrets.
The result is a humble, comforting and flavourful dish that demonstrates how traditional cuisine can turn simple ingredients into authentic gastronomic jewels.
Three recipes that tell the story of Ibiza
Each of these rice dishes reflects a different part of the island's identity.
The arròs de matances speaks to us of tradition and family gatherings; the paella, of the richness of the Mediterranean; and the arròs amb gerret i pinya de cabbage, of that domestic cuisine that has known how to take advantage of the closest products for centuries.
Three different ways of sitting at the table, but the same essence: the perfect union between the countryside and the sea that makes Ibizan gastronomy unique.
