Chef Pablo Carrizo (formerly of El Bulli, Celler de Can Roca, Quique Dacosta and Berasategui) is the creator of the new, delicious and delicate menu, which promises a journey through the fields of Ibiza.

Ibizan fields with ancient olive trees that provide us with our own olive oil, gardens full of native fruit trees, green and earthy colours: these are some of the elements that surround the exclusive country estate of Ca Na Xica, a boutique hotel located in the north-west of Ibiza (in Sant Miquel de Balansat) and the privileged setting for the Salvia restaurant, the island's best-kept gastronomic secret. The restaurant offers a new gastronomic experience that enhances, promotes and pays tribute to the great flavour of the vegetables provided by the island.
Salvia is thus located in an incomparable setting, where it offers haute cuisine designed for the most exquisite and discerning palates, with the flavour and quality of the produce taking centre stage. Its creator is Argentine chef Pablo Carrizo (trained in the kitchens of El Bulli, Celler, Quique Dacosta and Berasategui, Paco Roncero and Carme Ruscalleda).
Pablo Carrizo works closely with local producers and focuses on creating new gastronomic offerings, always adapting to the produce provided by the island. A tribute to the environment, the land and local producers.
A concise menu that aims to highlight the suggestions and thus enjoy seasonal produce, starting with the first section, HUERTO IBICENCO, which clearly demonstrates that one of Pablo and Salvia's strengths is the varied range of tempting dishes where the main ingredient is a seasonal vegetable.
From its dining room, open on both sides like a huge terrace, the restaurant becomes a viewpoint overlooking the Ibiza countryside, its own spice garden and the garden of aromatic plants and flowers.
The chef wants to convey a unique gastronomic experience, in line with the exclusive simplicity of luxury at Ca Na Xica. A menu to share. A project with soul and essence, whose values, such as passion, respect, honesty, luxury, attention to detail and things done well, are conveyed in each of Salvia Ibiza's dishes. Here, the beauty of the place is transferred to the plate and gives rise to a journey for the senses.
