Happy New Year! What can we expect from Ibiza’s food scene in 2026?

Happy New Year! What can we expect from Ibiza’s food scene in 2026?

Ibiza’s gastronomy is with us all year round, adapting to the seasons, local products, and island traditions.

Let us guide you through the flavours, events and recipes that will shape this year’s culinary journey.

Ibiza’s gastronomy through the seasons

bullit de peix

Ibiza tastes different in every season. Its products, recipes and food experiences shift with the weather, the rhythms of nature and the traditions rooted in the land.

In winter, hearty dishes like arròs de matances, sofrit pagès and bullit de peix take the spotlight. It’s also the perfect time to enjoy salsa de Nadal with bescuit, two sweet seasonal favourites.

Spring brings a burst of freshness. Markets are filled with red potatoes, seasonal greens and local fish. Terraces fill with life, menus change, and lighter dishes begin to shine.

Summer belongs to beach bars and seaside restaurants. Expect plenty of rice dishes, fresh fish, ensalada payesa, and refreshing cocktails at sunset. For dessert, greixonera and flaó are musts. Simple, direct, and refreshing is the island’s summer style.

Autumn slows everything down. The flavours deepen, mushrooms return, pork takes centre stage, and menus focus on earthy, seasonal dishes. It’s the perfect time to enjoy local food at a slower pace.

Essentials for cooking Ibizan food at home

arroz de matanzas

Ibiza’s traditional cuisine is humble but deeply rooted in its ingredients. If you want to try it at home, there are a few staples that give each dish its identity.

Red potatoes are common in dishes like frita de pulpo or bullit de peix, thanks to their texture and taste. Fresh fish —such as rotja, grouper or sea bream— are essential for island classics like bullit or guisat de peix.

For dessert, flaó calls for fresh cheese and mint, while greixonera is made with leftover ensaïmada. Homemade alioli is always on the table, and local spices like totespècies and saffron give a unique touch to many recipes.

To cook like an Ibicenco is to follow the rhythm of the land and sea, letting the ingredients speak for themselves. Why not give it a try this year?

Flavours that will be with us all year

2026 brings countless chances to rediscover the soul of Ibiza through food: traditional fairs, new openings, and age-old recipes passed down through generations.

At Eating in Ibiza, we’ll be your guide to the dishes that define the island and inspire you to enjoy local flavours, every season of the year.

Happy New Year and bon appétit!
